Easy Snack for the Big Game: Homemade Caramel Corn

Have you ever made homemade caramel corn? If not, this is your chance. This recipe for Caramel Corn is so simple to prepare and uses a variety of almonds, pecans and walnuts, adding more protein to your diet. Added bonus: Your house will also smell fabulous after you are done! Serve this for an after school snack or for the big game on Sunday. Just be careful because it can get very addicting!

Cook: 1 hour
Yield: 12 servings


1 1/2 quarts freshly popped popcorn
1 cup pecan halves
1 cup whole almonds
1 cup walnuts
1/2 cup butter
1 cup dark brown sugar
1/4 cup honey


Preheat oven to 250º F. Toss together popcorn, pecans, almonds and walnuts in a large lightly greased jellyroll pan (or line pan with parchment paper).

Melt butter in a medium saucepan over low heat. Stir in brown sugar and honey. Bring to a boil and cook 5 minutes without stirring. Remove from heat and pour over popcorn, stirring until evenly coated.

Bake for 1 hour, stirring every 15 minutes. Cool completely and break into pieces. Store in an airtight container, such as the new Ziploc® Brand Containers with One Press Seal, for up to five days of freshness.
