To make greener choices this year, many people (myself included) have embarked on a mission to reduce meat consumption. Although this may sound intimidating to some, achieving this goal is really quite simple and only requires you to make one small change. You don't have to fully commit to being vegan or vegetarian, simply add a few vegan or vegetarian meals to your diet. My family and I have participated in the “Meatless Monday” notion for quite some time now, and now that my daughter has decided to be a vegetarian, I am glad to have a few meatless options up my sleeve – like this recipe for Butternut Squash and Mushroom Pasta!

Meatless Monday Recipe: Butternut Squash and Mushroom Pasta 

Butternut Squash and Mushroom Pasta

Prep: 10 minutes
Cook: 25 minutes
Yield: 6 servings


1 butternut squash
1/2 cup onion, diced
2 tablespoon olive oil
3 sprigs fresh rosemary
1 teaspoon salt
1 teaspoon pepper
1 cup of half and half
1 container of baby portabella mushrooms (about 2 cups)
1/2 cup of grated parmesan
1 box of pasta of choice


First do your prep work. Remove ends, peel, and seed the butternut squash, then dice into small squares (about ⅓-inch). Next, peel and dice onion. Wash, dry and slice your baby portabellas. Cook your pasta according to directions.

Pour one tablespoon olive oil into a large skillet and warm over medium-high heat. Add in onion and simmer until lightly browned. Add butternut squash, rosemary, salt and pepper. Stir until squash begins to brown. Add half and half, turn heat down to medium and let simmer for 10 minutes.

In a separate skillet, warm the remaining olive oil and sauté mushrooms until lightly browned. Remove from heat.

Once the butternut squash is tender, remove from heat and blend with an immersion blender, creating a smooth pasta sauce.

Mix pasta with butternut squash sauce and serve. Garnish with sautéed mushrooms and parmesan.
