Meatless Monday: Couscous Salad

Meatless Monday is a fun way to get involved in the green movement to eat less meat. It is also a great time to add some variety into your diet and try new things. The first time we tried couscous, a grain that is popular in Northern Africa and France, my son asked if it was alien rice! I love couscous because it cooks so quickly and has a light, fluffy texture. This simple couscous salad makes a great one dish meal and is filled with protein, grain and veggies –perfect for the next Meatless Monday meal with your family.  

Couscous salad 

Couscous Salad Recipe

Prep: 10 minutes
Cook: 5 minutes
Yield: 4 servings

Couscous Ingredients

1 box of plain couscous (or 1 cup of couscous, if purchased in bulk)
1 tablespoon of olive oil or butter
1 1/2 cups of water for boiling couscous
1/4 cup of sweet onions
1/2 cup of parsley, diced fine
1 cup of red bell pepper, diced
1 cup of cucumber, peeled and diced
1 can of kidney beans, drained and rinsed (or one cup of cooked kidney beans drained and rinsed if from bulk)
1 cup of feta crumbles

Dressing Ingredients

1/3 cup olive oil
1/3 cup lemon juice
Handful of sprigs of fresh thyme or fresh mint, minced
1-2 cloves of garlic, pressed (amount depends on the garlic clove size and on your taste)
Salt and pepper, to taste (I used about 1/2 teaspoon of each)

Directions

Cook couscous according to instructions − usually includes adding couscous, olive oil and cups water to a pot until boiling and stirring occasionally. Turn off heat and cover for 5 minutes. Then fluff with a fork and allow to cool.

Prepare the dressing by mixing the olive oil and lemon juice with fresh minced herbs, pressed garlic, salt and pepper. I usually do this by shaking it in a jar. Let it sit in the fridge while you prepare the veggies.  

Prepare the veggies by washing or peeling as appropriate and then dicing. Combine sweet onions, parsley, red bell pepper, cucumber, kidney beans and feta crumbles in a large serving bowl. Re-fluff your couscous and combine with vegetables in large bowl, mixing well. Re-shake your dressing and pour into the bowl. Mix well and serve.
