Fall Treat: Pumpkin Granola

We absolutely love granola at my house for breakfast, lunch, as a snack, or after school meal. This pumpkin granola recipe is easy and sure to please you and your family’s taste buds. Just be sure to not overcook granola as the texture is similar to cookie dough, so it will continue to bake even after you remove it from the oven. This is also great to serve at Halloween parties or to give to friends, teachers and neighbors as a gift. 

Fall Treat: Pumpkin Granola 

Pumpkin Granola

Prep: 10 minutes
Cook: 25 minutes
Yield: 4 cups

Ingredients

3 cups old-fashioned oats
3/4 cup pecans
1/2 cup pumpkin seeds
1/2 cup dried cranberries
1/4 cup ground flaxseed
1 teaspoon pumpkin pie spice
1/2 teaspoon ground cinnamon
1/3 cup pumpkin puree
1/4 cup maple syrup
1/4 cup coconut oil
1 teaspoon honey    

Directions

Preheat oven to 325°F. Line a baking sheet with parchment paper.

In a large bowl, combine oats, pecans, pumpkin seed, cranberries, flaxseed, pumpkin pie spice and cinnamon; set aside.

In a small bowl, combine pumpkin puree, maple syrup, oil and honey. Pour mixture over oats, mixing well. Spread mixture on a parchment-lined baking sheet and bake for 25 minutes, or until golden brown, stirring every 10 minutes. Let cool completely and store in a large Ziploc® Container with One Press Seal.
