Chicken and Spinach Cheesy Sliders

If you’re a fan of a hot and creamy spinach dip, these sliders are a must-try. These mini sandwiches incorporate all the great, gooey elements of a warm spinach dip with the addition of grilled chicken, which gives the dish a bit more substance. They are impressive enough to serve a crowd, and simple enough to make for a weekend family lunch.

Chicken and Spinach Cheesy Sliders

Prep: 10 minutes
Cook: 10 minutes
Yield: 12 sliders


12 Sweet Hawaiian Dinner Rolls
12 Grilled Chicken Breast Strips
2 Cups Baby Spinach
3/4 Brick of Cream Cheese
1 Cup of Shredded Monterey Jack Cheese
1 Tablespoon Minced Garlic
2 Teaspoon Olive Oil
1 Tablespoon Butter


Season chicken strips lightly with salt & pepper and grill them in a pan with butter, set aside. In same pan, add olive oil, garlic, and baby spinach and cook spinach down about 2 minutes.

Add in cream cheese and shredded cheese and stir over medium heat until it is all one creamy, cheesy mixture.

Split dinner rolls open and spread nice scoop of cheesy mixture inside. Top with chicken strip, and top of roll. Skewer to hold to together and serve immediately.
