Overnight Oats with Blackberries, Pistachios and Coconut

One of the healthiest habits you can adopt this year is to start the day with a healthy breakfast.  It fuels us up and helps boost our blood sugar after a long night of fasting. However, mornings are busy and finding time to actually make a healthy breakfast is tough. For a quick, healthy and delicious breakfast, overnight oats are the clear winner! Soaking whole oats overnight softens them so they are the perfect consistency in the morning. You can adjust the types of fruits, nuts and flavors based on your own personal tastes. I chose to include blackberries, pistachios and coconut - which has a nice balance of flavor and sweetness.

Overnight Oats with Blackberries, Pistachios and Coconut


1 cup whole oats
3/4 cup almond milk (or any dairy or nondairy beverage)
2 tablespoons maple syrup
1/2 teaspoon vanilla
1/4 cup fresh blackberries
2 tablespoons shelled pistachios
2 tablespoons sweetened coconut


Place the oats in a Ziploc® Brand Container.

In a glass measuring cup, combine the almond milk, maple syrup and vanilla. Stir until mixed.

Pour the almond milk mixture over the oats and stir to combine.

Cover the container and place in the refrigerator overnight. In the morning, give the oats a stir, add the berries, pistachios and coconut. Enjoy!
