Easy Dinner: Slow Cooker Roast

Looking for an easy, but healthy and filling comfort-food dinner? This slow cooker roast is so easy, hearty and flavorful (it makes wonderful leftovers too). After a winter of too much processed food, this recipe is a great way to start “eating clean,” as it is simple, wholesome and made from real ingredients. Place the roast in the crockpot, top with the vegetables and broth, and let your slow cooker do the work all day. It’s that simple! As an added bonus, your kitchen will smell wonderful. Serve with crusty bread and a salad, and you have a complete dinner. If you have any leftovers, store them in a Ziploc® Brand Container. It is just as delicious served the next day!

Slow Cooker Roast

Prep: 20 minutes
Yield: 4 servings


3 pounds chuck roast
1 onion, sliced
2 large sweet potatoes, peeled and sliced into 1-inch rounds
2 cups sliced carrots
2 cups sliced celery
2 (8-ounce) packages sliced fresh mushrooms
1/2 cup beef broth
1/2 teaspoon garlic salt
1/2 teaspoon freshly ground pepper


Place roast in a slow cooker and top with onion, sweet potatoes, carrots, celery and mushrooms. Pour beef broth over the top and sprinkle evenly with garlic salt and pepper. Cook on high for five hours or low for eight hours.
