Mini Pudding Parfaits

When I was a young girl, I used to go to my Grandma’s house and she would make this dessert that I loved. I don’t think it was that unique of a recipe, but I remember loving the times she made it. It was a combination of pudding, vanilla wafer cookies and whipped cream. I loved this dessert so much that I always wanted seconds, and I looked forward to visiting because I knew I was in for a treat.    

This fun recipe was inspired by my Grandmother’s delicious recipe, only this time in mini servings. I enjoy taking a nostalgic recipe and putting a modern spin on it, which is what I’ve done here. Crushing the cookies into fine crumbs is key to getting the perfect layers, so be sure to take your time. Also, there is just something so delicious about homemade pudding. Full disclosure: I might have licked the bowl and spoon during the process.

Mini pudding parfaits 

Vanilla Pudding

Prep: 15 minutes
Yield: 6-8 small servings

Ingredients

1/3 cup sugar
2 tablespoons cornstarch
1/4 teaspoon salt
2 tablespoons butter
2 egg yolks
2 cups whole milk
1 teaspoon pure vanilla extract
Crushed vanilla wafer cookies
Whipped Cream, to taste
Sprinkles

Directions

Whisk together the sugar, cornstarch and salt in a medium saucepan. Briskly whisk in the egg yolks and the milk.

Place the mixture over medium heat and cook, whisking often, until the mixture bubbles and thickens.

Once it has bubbled for a full minute, remove from the heat and mix in the butter and vanilla. Stir until the butter melts and the mixture is smooth.

Pour into 6-8 small glasses with a layer of crushed cookie on the bottom. Cover each glass with a small piece of plastic wrap and place in the refrigerator until cool.

Once the pudding is chilled, remove from the fridge and top with another layer of crushed cookies. Add sprinkles, whipped cream and for good measure, a few more sprinkles. Enjoy!
