Meatless Monday: Roasted Chickpeas Gyro

With warmer weather coming, it’s nice to find meals that don’t require hours of baking in the oven, which can turn your kitchen into a sauna! Between afterschool sports starting up and school activities running late, a quick and easy dinner can really simplify family life. Sometimes, a sandwich is all you need for a light and healthy dinner. However, finding tasty sandwiches with lean protein and vegetables isn't always easy. This roasted chickpea gyro is a wonderful option if you are looking for a healthy and quick Meatless Monday dinner idea. You can roast the chickpeas ahead of time, meaning all you need to do is assemble it and eat! Pair your sandwich with fruit salad for a filling and incredibly tasty dinner recipe!

Roasted Chickpeas Gyro 

Roasted Chickpeas Gyro

Prep time: 10 minutes
Cook time: 30-40 minutes (for chickpeas)
Yield: 4-5 servings

Ingredients:

1 (12 ounce) can chickpeas, drained, rinsed and patted dry
2 to 3 tablespoons olive oil
Salt, pepper and garlic powder to taste
1 loaf naan bread (feel free to substitute pita or other type of flatbreads)
Premade tzatziki sauce or Greek yogurt-style spread
1/2 red onion, thinly sliced
Fresh lettuce leaves, washed and dried
1 tomato, sliced

Directions:

Preheat the oven to 400° F. Pour the drained, rinsed and dried chickpeas into a bowl and drizzle with olive oil and seasoning, stirring to combine.

Place the chickpeas on a cookie sheet lined with foil and roast for 30 to 40 minutes, stirring every 15 minutes to ensure even cooking.

Remove the pan from the oven and let cool slightly before assembling the sandwich, or stash the roasted chickpeas in a small Ziploc® Brand Container for later use.

Lay a piece of flatbread on a flat surface and spread with tzatziki. Add the lettuce, onion, tomato and roasted chickpeas, wrap it up and serve!
