There are some items that we purchase purely for convenience. Lives get busy and time in the kitchen is often cut short by other obligations. However, if you can find a bit of extra time to “do it yourself,” you’ll not only reduce your carbon footprint, but also save a significant amount of money. Homemade baking mix takes only minutes to prepare, and is shelf staple for months in your pantry. Instead of buying a large box of premade baking mix, consider making it from scratch this month. This homemade baking mix recipe can be used in place of name brand mixes to make pancakes, biscuits and all sorts of delicious treats.  

Homemade Baking Mix

Prep: 5 minutes
Yield: 3 cups of mix


3 cups all-purpose flour
1 tablespoon salt
2 tablespoons baking powder
1/2 cup coconut oil or shortening (your preference)


Place all ingredients in the bowl of your mixer and mix on medium-low speed until completely combined.

Store in a large Ziploc® Brand Container.

To use for pancakes: Combine 2 cups baking mix, 1 cup milk and 2 eggs in a bowl. Mix well and follow your normal pancake making process. 

To use for drop biscuits: Combine 2 cups baking mix with 1 cup milk. Stir until combined. Using a scoop, place ¼ cup of the batter onto a greased cookie sheet. Bake at 450° F for 10 to 15 minutes, or until golden brown.

Other uses: Homemade baking mix is interchangeable with most major brands. Use the baking aisle of your grocery store for inspiration!
