Meatless Monday: Spicy Thai Noodle Bowls

Pasta is a fairly common meal in most households, however it doesn't always need to be topped with a red sauce and served with meatballs. In fact, pasta is one of my favorite meal bases because there is so much you can do without meat.

One delicious vegetarian pasta dish gets inspiration from the spicy peanut sauce that is common at many Thai restaurants. I take this sauce and add finely sliced vegetables and fresh cilantro to give it a bold flavor with bits of crunchy sweetness. The peanut butter and peanuts provide a nice boost of protein. Depending on your family‚Äôs tastes, you can adjust the heat in this dish by varying the amount of Sriracha you use in the sauce.  

Spicy Thai Noodle Bowls 

Spicy Thai Noodle Bowls

Ingredients:

10 ounces Udon noodles, cooked according to package directions
2 tablespoons grape seed oil
2 tablespoons sesame oil
5 tablespoons soy sauce
2 teaspoons rice vinegar
1 teaspoon Sriracha (more or less to taste)
1/4 cup peanut butter
1 tablespoon honey
2 cloves garlic, minced
1 green onion, minced
1/2 red bell pepper, thinly sliced
1 carrot, julienned
1/3 cup fresh cilantro, chopped
1/2 cup chopped peanuts  

Directions

Cook pasta according to package directions and drain.

Meanwhile, in a small bowl, combine the grape seed oil, sesame oil, soy sauce, rice vinegar, Sriracha, peanut butter, honey and garlic. Mix briskly until completely combined.

Return the pasta to the large cooking pot. Add the sauce, bell pepper, carrot, green onion, cilantro and peanuts. Toss until combined.

Serve warm, topped with additional peanuts, cilantro and green onions if desired.
