Healthy Gluten Free Cookie

Whether you follow a gluten-free diet or not, you will fall in love with this cookie recipe. This recipe has been a staple in my house for years, and my three children continue to ask me to make them whenever I mention the word “cookie.” These gluten free chocolate chip cookies contain no flour, butter, oil, dairy or egg yolks. What’s even more amazing is that they require no mixer! Be sure to bake these on baking sheets covered with parchment paper.

With only five ingredients, these cookies are simple and quick to prepare—only 25 minutes from start to finish. They come out light and chewy, but with the perfect amount of crunch and enough chocolaty flavor to satisfy the biggest sweet tooth. Enjoy this healthier cookie recipe any time you crave something sweet. More importantly, consider doubling this recipe because they go fast!

Store leftover cookies with a sheet of wax paper in between them in a medium Ziploc® Brand Container for up to 5 days.

Chocolate Chip Cookies and a glass of milk

Chocolate Chip Cookies

Prep: 10 minutes
Cook: 11 minutes
Yield: 14 cookies

Ingredients

  • 1 cup creamy peanut butter
  • ¾ cup sugar
  • 2 egg whites
  • 1 teaspoon baking soda
  • ⅓ cup mini semisweet chocolate chips


Directions


Preheat oven to 350°F. Meanwhile, line a large baking sheet with parchment paper.

Combine peanut butter and sugar in a large bowl until smooth. Add egg whites and baking soda, mixing well. Stir in chocolate chips. Scoop cookie dough and place 1½ inches apart on prepared baking sheet.

Bake until puffed and a golden pale, about 10 minutes.

Let cookies cool on baking sheet for about two minutes and then transfer with a spatula to a wire rack to cool.

Store in Ziploc® Brand Container at room temperature for up to five days.
