You will love this pumpkin spice overnight oats recipe for its convenience and delicious fall flavor. It’s a vegetarian, green choice dish you can prepare ahead of time, and then grab and take on the go. Overnight oats are super easy to make and you can personalize them with your favorite flavors. I decided on pumpkin spice overnight oats because I just love pumpkins in the fall.
Pumpkin Spice Overnight Oats
Prep: 3 minutes
Yield: 1 serving
- ¾ cup rolled oats
- ¾ cup almond milk or regular milk
- 2 tablespoons pumpkin puree (make it fresh or used canned)
- ½ teaspoon vanilla extract
- 1 tablespoon maple syrup
- ¼ teaspoon pumpkin pie spice (or ⅛ teaspoon cinnamon and sprinkles of ground ginger, ground nutmeg, ground allspice and cloves)
- ¼ cup of walnuts for topping (optional)
- ⅛ cup of chocolate chips (optional)
These instructions are for one serving, if you’re preparing for more than one person, multiply by the number of people.
Measure your oats into a large Ziploc® Brand Container.
Mix milk, pumpkin puree, vanilla, maple syrup and spices together in a blender. Pour liquid mixture onto oats. Stir well and refrigerate overnight (8 hours gives it about the right amount of time to soak up the liquid).
In the morning, top your “Pumpkin Spice Overnight Oats” with some walnuts and chocolate chips for crunch, then enjoy. They are so easy to prepare and easy to grab for eating at home or on the go.
