Easy Comfort Dinner

When you’re in the mood for a comfort food dinner with very little preparation time, this slow cooker roast with vegetables is a winner. Place the roast in the slow cooker with potatoes, onions, garlic, carrots and fresh herbs, and hours later you’ll have a tender, flavorful home cooked meal. Served with a salad and crusty bread, if desired, for a hearty comfort food dinner, perfect for warming up on a winter’s night! If you have a busy week ahead, prepare the roast a day ahead of time and store it in a Ziploc® Brand Container for up to three days. 

Slow Cooker Roast with Vegetables 

Slow Cooker Roast with Vegetables 

Prep: 15 minutes
Cook: 4 to 8 hours
Yield: 4 servings


2 1/2 pound rump round roast
1 1/2 teaspoons Italian seasoning
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground pepper   
1/2 pound new potatoes   
3 cloves garlic   
3 large carrots, cut into 2-inch pieces   
1 large onion, sliced   
4 sprigs fresh thyme   
4 sprigs fresh rosemary   
2 cups beef broth   
1 (14 ounce) can diced tomatoes   
2 tablespoons tomato paste


Season roast with Italian seasoning, salt and pepper. Place in a five-quart slow cooker and arrange potatoes, garlic, carrots, onion, thyme and rosemary around beef.

In a large bowl combine broth, tomatoes, 1 cup water and tomato paste, stirring well. Pour over beef and cover with lid. Cook 8 hours on low or 4 hours on high, or until vegetables are tender. Let stand 10 minutes before slicing beef, and serve with vegetables and sauce.
