Grilled Veggie Pasta Salad 

Spring is here, and it is a great time of year to get out the grill and do some outdoor cooking.  One of the great benefits of using the grill is you don't have to heat up your house. This grilled veggie pasta salad is perfect for a nice light meal that still leaves you feeling satisfied on a Meatless Monday.

You can make this grilled veggie pasta salad ahead of time, or whip it up last minute. It is an easy dish to bring on a picnic or to a potluck, and is sure to be enjoyed by vegetarians and carnivores alike.

Grilled Veggies Pasta Salad:

Prep: 15 minutes
Cook: 15 minutes
Yield: 4 servings


1 box of penne pasta
Homemade Italian dressing
2 small zucchinis, sliced lengthwise
1 small eggplant, sliced lengthwise
2 red bell peppers, sliced in half
1 small Spanish onion, sliced into rings
1 tablespoon olive oil
1/2 cup pitted Kalamata olives
1 cup mini fresh mozzarella balls


Cook pasta according to instructions. Once cooked, rinse in cool water and drain well. Pour pasta into a large serving bowl along with 1/2 cup of homemade Italian dressing and mix well.  Add the olives and mozzarella and place in the refrigerator in a Ziploc® brand container to cool.

Slice eggplant and zucchini lengthwise for grilling. Now, using a trick I learned in Italy, pull the water out of the zucchini and eggplant by coating each side of the vegetables with sea salt and set on a plate with a few paper towels above and below. Then, place a heavy pan on top and allow to sit for about 10 minutes while the water is wicked out by the salt and absorbed by the paper towels.

Remove the seeds and slice the red pepper in half for grilling. Peel and slice the onion into thick rings.

Brush the veggies with olive oil, and grill over medium heat until just cooked. Remove from the grill and set aside to cool.

Dice your grilled veggies and mix into the pasta, adding extra dressing to taste. Mix well and serve.
