Father’s Day Po’ Boy Sandwich

A Po’ Boy Sandwich is a traditional sandwich from Louisiana, typically served on a French baguette and filled with fried seafood or roast beef. I was inspired to create this recipe after my recent trip to New Orleans. This recipe for Grilled Shrimp Po’ Boys is a twist on the fried version, healthier and perfect for summer weather and outdoor grilling. I don’t want the shrimp to be overpowered by seasonings, so I use a simple blend of lemon juice, olive oil and Creole seasoning. Free free to use lemon pepper or any other spices that your family enjoys.

Before cooking, marinate the shrimp in a Ziploc® Brand Bag bag for 30 minutes to 1 hour. This Po’ Boy Sandwich is a wonderful Father’s Day recipe topped with cooked bacon and dad’s other favorite toppings. If you have any leftover shrimp, serve on top of a salad the next day.

Father's Day Po' Boy Sandwich 

Shrimp Po’ Boys

Prep: 20 minutes
Marinate: 30 minutes to 1 hour
Cook: 4 minutes
Yield: 4 servings


4 tablespoons olive oil, divided
2 tablespoons fresh lemon juice
1 1/2 pounds large fresh shrimp, peeled and deveined with tails removed
1 tablespoon Creole seasoning
4 (6-inch) French bread rolls, split and toasted
1/4 cup cocktail sauce
8 slices bacon, cooked
1 cup shredded lettuce
1 tomato, seeded and chopped
1/3 cup sliced red onion (optional)


Drizzle half the olive oil and the lemon juice over shrimp and sprinkle evenly with Creole seasoning, then mix gently. In a large skillet, cook shrimp in remaining oil for 2 to 4 minutes on each side or until shrimp are no longer pink. Keep warm and set aside.

Place rolls on a work surface. Spread cocktail sauce equally on cut surfaces of roll halves. Arrange shrimp, bacon, lettuce, tomato and onion, if desired, equally on bottom halves of rolls.

Cover with top bread halves, pressing together gently.
