Apple Coffee Cake Recipe

Using fruit and vegetables that are locally in-season is a great green choice as it helps to cut down on transportation and greenhouse gas emissions. Besides, using seasonal produce is a fun part of embracing each season!  Apples begin coming into season in August though many last through October and sometimes even into November. Take advantage of the apple season and enjoy the flavors of fall as you sip hot apple cider and munch on this delicious recipe for Apple Coffee Cake with Streusel Topping. While I used many organic ingredients in this recipe (Choosing organic ingredients is another great way to go green), you can use the ingredient of your choice. I like to make this recipe in the evening and enjoy it on busy school mornings, or as an afternoon snack. 

Apple Coffee Cake Recipe 

Apple Coffee Cake with Streusel Topping

Prep: 10 minutes
Cook: 40-45 minutes
Yield: 1 coffee cake, about 12 servings

Streusel Ingredients

2 tablespoons organic butter
2 tablespoons organic flour
5 tablespoons organic brown sugar
2 tablespoon organic oats, ground (use a food processor or coffee grinder)
2 tablespoon organic walnuts, ground (use a food processor or coffee grinder)

Coffee Cake Ingredients

1 cup organic coconut oil or butter
1 cup organic granulated sugar
1 tablespoon organic vanilla extract
1 cup of organic apple sauce
2 organic eggs
2 cups organic all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons of organic cinnamon
1/2 teaspoon ground ginger (optional)
1/2 teaspoon ground nutmeg (optional)
1/4 teaspoon cloves (optional)
1/3 cup of white chocolate chips (optional)
1 cup cored, peeled, diced apples

Directions

Preheat oven to 350°F.In a small bowl, combine all streusel ingredients and mix well. Set aside.

In a large bowl, add coconut oil (or butter) and sugar and mix until smooth. Then, add vanilla and apple sauce, mixing well. Next, whisk two eggs and add to the large bowl, mixing all ingredients until combined.

In a medium-sized bowl, combine flour, baking powder, baking soda, salt, cinnamon and desired spices. You can either stir them or run the mixture through a sifter. Once mixed, combine and beat well. Set aside.

Next, grease a Bundt cake pan.

Sprinkle the streusel mixture across the bottom of the Bundt pan, spreading it out enough to fill the bottom of the small ring. Pour the cake batter into your baking pan on top of the mixture.

Then, sprinkle on the white chocolate chips and the diced apples onto the coffee cake batter, pressing down with a spatula so they don't poke out.

Bake in oven for 40-45 minutes. After 40 minutes, check to see if the top of the cake is browning. You can also insert a toothpick into the cake to see if the toothpick comes out clean (free of coffee cake mixture) indicating the cake is done cooking. Set aside and let cool.

Once cooled, flip the Bundt pan over onto a plate so that the streusel topping is now facing upward, making the top of the cake. Slice into pieces and enjoy!
