Strawberry Spinach Salad with Poppy Seed Dressing | Family Economics

strawberry spinach saladWhen it comes to fruit on a salad, this is my favorite combination. Strawberries, almond slivers and spinach with a touch of a sweet creamy poppy seed dressing. Yum!

And what makes this salad even better? Picking the spinach from your garden!

In most regions, you can grow spinach starting in the early spring, as it is resistant to cold temperatures.  And if you play your garden cards right, you can grow in late summer or fall when the temperatures are cooler again.

Summertime is the best time of year to experiment and look for new flavor combinations. Between the different varieties of lettuce, the myriad of fruits, vegetables and other toppings to the endless dressing options, there seem to be a million salad possibilities!

Strawberry Spinach Salad with Poppy Seed Dressing

Ingredients

10 ounce bag spinach leaves (or freshly picked spinach)
12 strawberries, stems removed and sliced
1 cup slivered almonds
1/2 cup store bought creamy poppy seed dressing

Directions

1.    In a large bowl, toss together the spinach leaves, sliced strawberries and slivered almonds.

2.    Serve onto four plates.

3.    Drizzle the poppy seed dressing on top of each serving.

Makes four lunch portions.
