Fresh Shrimp Salad | Family Economics

Spring is in the air, making it the perfect time for a light and refreshing snack. In just 30 minutes you can prepare this Fresh Shrimp Salad to serve over greens, with crackers or on a sandwich. This dish is a favorite at my house for welcoming spring.

What is your favorite way to prepare shrimp?

Fresh shrimp salad

Fresh Shrimp Salad

Prep: 30 minutes
Yield: 4 servings

Ingredients

1 1/2 pounds medium shrimp, peeled, deveined, cooked and tails removed
2 stalks celery, finely chopped
2 green onions, finely chopped
1/2 cup Italian parsley, finely chopped
3 tablespoons fresh lemon juice
3 tablespoons olive oil
1/4 teaspoon sea salt
1/2 teaspoon black pepper, freshly ground

Directions

Combine all ingredients in a large bowl, mixing well. Place in Ziploc® Brand Storage Bag with the Smart Zip® Seal and chill for a minimum of 30 minutes or up to 8 hours. Serve over mixed greens, arugula, crackers, or on hoagie rolls with lettuce and tomato.
