Refreshing S'mores Dessert | Family Economics

S’mores are a classic summertime cooking activity and the perfect late night snack, especially if you’re camping. It is said the name “s’mores” was actually derived from “some” and “more" because of the constant requests for more, which I can completely understand! S’mores are my daughter Leigh’s favorite dessert and she suggested we come up with this recipe for S’mores Ice Cream Pie. Let me know what you think!

What is your favorite way to eat s’mores?

S'mores Ice Cream Pie 

S’mores Ice Cream Pie

Prep: 15 minutes
Yield: 10 to servings


1/2 (1 1/2 quart) container of your favorite ice cream (we used vanilla)
9 graham cracker sheets
2 regular chocolate bars, melted (melt chocolate by microwave on low in 30-second intervals, mixing thoroughly)
1/2 (10 ounce) package large marshmallows
1/4 cup skim milk


Lightly coat an 8-inch square pan with cooking spray. Line prepared pan with plastic wrap, leaving a 6-inch overhang on two sides. Fill bottom with ice cream. Top evenly with about 4½ sheets of graham crackers and cover with chocolate. Place in the freezer for 10 minutes.

Meanwhile, place marshmallows in a medium, microwave-safe bowl on high heat for 40 seconds. Add milk, mixing well. Let cool slightly. Spread marshmallow mixture over chocolate and top with remaining graham crackers, wrap in plastic wrap and freeze for about 8 hours. Turn pan upside and use extra plastic wrap to push pie down and onto a serving plate. Serve immediately.
