Meatless Monday Seed Loaf Recipe

I got this vegetarian meatloaf recipe from my mom. I really enjoy her seed loaf recipe and so do my children. I like to serve it with some baked sweet potatoes and sautéed turnip greens but it goes well with almost anything!

Seed Loaf 

Vegetarian Meatloaf: Seed Loaf Recipe

Prep: 15 minutes
Cook: 45 minutes
Yield: 4 servings


1 tablespoon olive oil
1 onion, diced fine
1 leek, sliced fine
2 celery ribs, sliced fine
2 garlic cloves, crushed
1 15-ounce can lentils, rinsed and drained
1/2 cup sunflower seeds
1/2 cup of walnuts, finely chopped
1/2 cup all-purpose flour
1/2 cup grated cheddar cheese
1 medium egg
2 tablespoons chopped fresh parsley
1 tablespoon chopped fresh oregano
1 tablespoon chopped fresh thyme
1 teaspoon salt


:Preheat oven to 350 degrees.

In a large skillet over medium heat, add oil and then onion, leek, celery, and garlic. Sauté for about 10 minutes, stirring occasionally. Remove from heat.  

In a large bowl, add all the ingredients (including the sautéed veggies) and mix well.

Grease loaf pan. Pour the seed loaf mixture into the pan and use a spoon to even out the mixture.  

Bake for 45 minutes or until golden brown on top and firm to the touch.
