Neapolitan Mini Cakes | Family Economics

Neapolitan is one of my favorite ice cream flavors. There is something wonderful about not having to choose just one flavor ― you get a little vanilla, chocolate and strawberry ― which feels like a real treat. Recently, I wanted to have the same experience but with cake, so I made these Neapolitan mini cakes (and they were a hit!).

Mini cakes 

To make mini cakes you will need a mini loaf pan that makes four cakes.

Mini Neapolitan Cakes

Prep: 15 minutes
Yield: 4 mini cake


1 box chocolate cake mix
1 box vanilla cake mix
1 box strawberry cake mix


In three separate bowls, prepare cake mixes as directed. Then, add a little of each cake mix flavor into a prepared mini loaf pan. Bake at 350°F for 20 minutes. To check if your cakes are done, insert a toothpick and see if it comes out clean. If not, bake until fully cooked.
