Healthy Holiday Side: Kale Broccoli Slaw | Family Economics

Since my kids actually like kale and broccoli, I combined the two to make this Kale Broccoli Slaw, perfect for a healthy side dish. This healthy side dish is fabulous with dried cranberries, almonds and the tangy and sweet Greek yogurt dressing.

Broccoli slaw has only 25 calories per servings and 120 percent of daily needs of Vitamin C. Kale is a powerhouse of nutrition with so many health benefits. My kids and I also like this side dish for a quick, healthy lunch (on top of arugula). Be sure to store in a Ziploc® Brand Container to keep up to three days.

Kale Broccoli Slaw 

Kale Broccoli Slaw

Prep: 15 minutes
Yield: 4 servings 

Ingredients

Dressing
2 tablespoons olive oil
3 tablespoons red wine or sherry vinegar
2 tablespoons honey
3 tablespoons plain nonfat Greek yogurt
1 teaspoon Dijon mustard
1/4 teaspoon freshly ground pepper

Slaw

6 cups fresh kale, chopped
2 cups broccoli slaw mix
1/2 cup slivered almonds, toasted
1/2 cup dried cranberries  

Directions

Whisk together the dressing ingredients in a small bowl; set aside.

Combine kale and remaining ingredients in a large bowl. Add dressing, tossing gently to coat. Refrigerate at least 30 minutes before serving.
