Thanksgiving Dessert: Oatmeal Chocolate Pecan Pie | Family Economics

I wanted to share my new, favorite dessert – Oatmeal Chocolate Chip Pecan Pie – perfect for the upcoming Thanksgiving holiday. This pie is not only delicious, but requires only 15 minutes of my “hands-on” time! A dream come true for those of us that will be playing chef for the next few months. Adding oatmeal to this pie makes it a little bit healthier and gives it more texture. My three children are in love with this dessert, so it looks like I’ll be making several of these during both Thanksgiving and Christmas. Feel free to use dark chocolate chips instead of semisweet if you wish. Enjoy!

Oatmeal Chocolate Pecan Pie 

Thanksgiving Dessert: Oatmeal Chocolate Pecan Pie

Prep: 15 minutes
Cook: 45 minutes
Yield: 12 servings

Ingredients

Cooking spray
1/2 (15-ounce) package refrigerated pie dough
3/4 cup dark brown sugar
1/2 cup light corn syrup
2 eggs, lightly beaten
1 teaspoon vanilla extract
2/3 cup regular oats
1/2 teaspoon salt
3/4 cup pecans, finely chopped
1/3 cup semisweet or dark chocolate chips

Directions

Preheat oven to 325°F.

Coat 9-inch pie plate with cooking spray and fill with pie dough. Crimp edges as desired.

Combine brown sugar, corn syrup, eggs, vanilla extract, oats and salt, stirring well with a whisk. Stir in pecans and chocolate chips. Bake for 45 minutes or until center is set. Cool completely before serving.
